Grammar in this conversation — "Je vais prendre" — the restaurant ordering reflex

In a restaurant, French speakers default to je vais prendre (literally "I'm going to take") — not "I want" or "give me". Same softening trick as je voudrais, but specific to ordering food and drinks.
